Ingredients
Scale
- 2 pounds boneless, skinless chicken breasts
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 slices provolone cheese
- Hoagie rolls or sandwich buns
Instructions
- Slice the onion and bell peppers, and mince the garlic.
- Place the chicken breasts in the slow cooker, add the sliced vegetables and garlic, pour the beef broth around the sides, and season with Italian seasoning, salt, and pepper.
- Cook on low for 6‑7 hours (or high for 3‑4 hours) until the chicken is tender.
- Shred the chicken directly in the pot with two forks and stir to combine with the vegetables and broth.
- Lay the provolone cheese slices on top, replace the lid, and let the residual heat melt the cheese for 5‑10 minutes.
- Toast the hoagie rolls, spoon the chicken‑pepper mixture onto each roll, and serve immediately.
Notes
- For extra flavor
- sear the chicken briefly before adding to the crockpot. Use freshly grated provolone for best melt. Leftovers reheat well with a splash of broth.
