Description

Discover a succulent cranberry balsamic roast beef recipe that combines sweet-tart cranberry glaze with rich balsamic notes, ideal for holiday gatherings.

Ingredients

Scale
  • 2 kg (about lb) beef rib roast
  • trimmed
  • 2 tbsp olive oil
  • 1 ½ tbsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tsp garlic powder
  • 2 tsp dried rosemary
  • 1 tsp dried thyme
  • 250 g fresh cranberries (about 2 cups)
  • ¼ cup balsamic vinegar
  • ¼ cup honey or maple syrup
  • 2 tbsp unsalted butter
  • melted
  • ½ cup low‑sodium beef broth
  • 1 tbsp Dijon mustard
  • 1 tsp orange zest (optional)

Instructions

  1. Preheat oven to 150 °C (300 °F). Pat the beef roast dry, rub with olive oil, and season with salt, pepper, garlic powder, rosemary, and thyme, pressing the seasoning into the meat.,Place the roast on a rack in a roasting pan, insert a meat thermometer into the thickest part, and roast low and slow for about 2 hours until internal temperature reaches 55 °C (130 °F) for medium‑rare (or 60 °C for medium).,While the beef roasts, combine cranberries, balsamic vinegar, honey (or maple syrup), melted butter, beef broth, Dijon mustard, and orange zest in a saucepan; bring to a boil, then simmer 10‑12 minutes until thickened, then blend or strain if a smoother glaze is desired.,Remove the roast, transfer to a cutting board, tent with foil, and let rest 15‑20 minutes to allow juices to redistribute.,Brush the rested roast generously with the warm cranberry‑balsamic glaze, then return to the oven at 200 °C (400 °F) for 5 minutes to caramelize the glaze.,Let the glazed roast rest 5 minutes, slice against the grain into ½‑inch thick slices, and serve with any remaining glaze drizzled over the top.

Notes

  • Make the glaze ahead of time and store refrigerated
  • reheat gently before brushing. For a spicier version, add crushed red pepper flakes to the glaze.
