  • 8 ounces rotini pasta
  • 1 cup smoked beef, diced
  • 1 cup beef pepperoni, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/2 cup provolone cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup grape juice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta according to package directions; drain and rinse under cold water.
  2. In a large bowl combine cooked pasta, smoked beef, beef pepperoni, cherry tomatoes, cucumber, red onion, mozzarella, provolone, and parsley.
  3. Whisk olive oil, grape juice, Italian seasoning, salt, and pepper in a small bowl.
  4. Pour dressing over pasta mixture and toss to coat evenly.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a spicier version
  • add sliced jalapeño or a dash of hot sauce. The salad holds well for up to three days refrigerated. Serve chilled with crusty bread or grilled protein.
